Food And Wine Pairings
I need help pairing wine with Costa Rican food!?

Hey Everyone,
Im doing a project on Costa Rica and I need to pair a Costa Rican appetiser, entree and Dessert with old world and new world wine. I don’t know much about wine pairing. Please help!

First, I need to pair Ceviche- (chopped raw fish, onions, garlic and tomatoes in lemon juice) with and Old and New World wine.

Second, I need to pair a Casado – (typical dish with chicken, rice, beans, salad, picadillo and fried plantains) with an Old and New world wine.

Third and last, I need to pair the Dessert, Tres Leches (a three-layered custard flan) with an Old world and a new world wine.

Please explain your pairings.

1st course new world sauvinion blanc from 75(is the name) napa valley the crisp dryness of the wine and the acidity and the citrus flavor balance great with ceviche (my fav pairing) …. old world. albarino (is the grape) Nessa (is the name) from spain. the apple and melon along with citrus really bring out the dominant flavors(cilantro and citru) in the ceviche

2nd course pinot noir is the best bet for both new world and old world wine. new world we have HOOK AND LADDER (the name) from Russian River valley california. the dark fruit flavor and aromas will not over power the chicken but will stand up to the ground meat and maduros. old world pinot noir would be from france the french call their noirs burgandy’s the name will be Brane-Cantenac and it goes well because the ripe berry flavors will balnce well with the beans and plantains.

and with the tres leches for old world you should go with moscatel (the grape white.) Silvano garcia from spain the sweetness of the moscatal will not be over powered by the very rich tres leches (is not a custard flan. fyi.) the new world would be ice wine from canada. INNISKILIN is the name, the sweetness and richness of the wine wont be over powered by the tres leche. OLD WORLD PORT COULD ALSO GO REALLY WELL.
